
This is a recipe for peppermint bark, a holiday candy many people rave about. It is gluten-free, so an excellent treat for those with Celiac's Disease. The candy can be an excellent gift when placed in a festive holiday box or it is a nice treat to bring to a holiday party.
The candy is relatively cheap to make, as the chocolate runs about $2.99 a pound at Wegmans and each batch makes several servings. In my opinion, Wegmans has the best tasting chocolate, so I highly recommend purchasing it there. Total prep time is about 30 minutes at the most.
Ingredients:
1 lb milk chocolate or dark chocolate wafers
3/4 lb white chocolate wafers
1 box peppermint candy canes
Directions:
Line the bottom of a jelly roll pan with wax paper.
Melt milk/dark chocolate in a double boiler until smooth and spread in the lined pan. Cool by placing in the refridgerator.
Melt the white chocolate the same way. While that is melting crush up candy canes. Mix most of the crushed candy canes into the white chocolate, leaving bigger chunks aside for now.
Spread white chocolate on hardened milk chocolate. Do this quickly, before the hot white chocolate starts melting the milk/dark chocolate.
Now sprinkle the bigger candy cane pieces on top.
After the white chocolate is hardened, break into pieces. Enjoy!
