Best Baked Fried Chicken Recipe

Best Baked Fried Chicken Recipe
Written by Steve Dowling on 2015-03-24

What makes this chicken so much better than other baked “fried” versions? The chicken is marinated in buttermilk and spices so it becomes super tender as it soaks up all the spicy goodness and then the breading isn’t just flour but a harmony of flour, panko breadcrumbs and cornmeal that has been spiced to perfection for extra crispiness and flavor then baked in a little butter (a fraction of...(Read More)

This soup has all of the flavors of decadent Chicken Parmesan, but in a more waist-friendly vehicle. Chicken broth and crushed tomatoes are simmered with garlic, onion, basil, oregano and red pepper flakes for an aromatic base. Shredded lean chicken breast, green bell pepper and gemelli pasta fill you up. And everything is topped with a little cheese, of course.

This time I went another route and turned it into a wrap. It was equally delicious. One of the great things about this recipe is that the chicken is cooked in the crock pot. It’s a great way to slow cook while you can go about your day. At the...(Read More)

Homemade Stovetop Mac and Cheese

Homemade Stovetop Mac and Cheese
Written by Steve Dowling on 2015-03-02

This homemade recipe is definitely more of an adult version with three types of cheese. You can substitute other types of pasta, but I love using the elbow macaroni because it reminds me of the classic childhood version.

To make the macaroni and cheese, Cheddar, mozzarella, and Parmesan cheese are melted into a thick milk mixture to form a creamy and cheesy pasta sauce. The best part about this...(Read More)
